Chef Ueli Huegli is the last of a breed or at least darned close. Back in the day, Los Angeles was a city of European trained chefs, men (always men back then) who had learned their skills in the fine dining restaurants in the tres elegant hotels of Europe, who cooked classic dishes with many sauces, who loved table-side preparations with many a flourish and a flash of flame.
